Elderberry

Common Names: Elderberry
Latin Names: Sambucus nigra
Type: Shrub
Origin: Native

Edible: Fruit can be eaten cooked for jam, pie, and wine. Blooms can make a syrup or a tea (a stimulant). Both the fruit and flowers are full of vitamin C and antioxidants. Leaves and stems are considered poisonous.
--> Said to be too tart to eat raw, will cause diarrhea, vomiting, and nausea, and cause cyanide poisoning but I have been eaten raw berries with cereal from June-July with no effect. I am not recommending eating berries raw given all this info online but I haven't seen any problems. Had elderberry tarts (sugar & cooked elderberries) during a local pot luck.

Other uses: There are various medicinal uses of the dried berry and flowers including for pain relief, flu, and colds. Fruit can be used as a dye. Wood can be used in various ways.

Notes: Good for butterflies. Some of the berry stems are green while other are reddish. Berries seem plumper later in the season.
